Tortellini Alfredo
This recipe is great for lunch, because it is a tasty, quick way to make delicious pasta that everyone will love!
Ingredients
- Heavy cream 3/4 cup (6 fl oz/180 ml) - Parmesan cheese 1/2 cup (2 oz/60 g) grated, plus more for sprinkling - Butter 3 tablespoons - Salt and freshly ground black pepper - Ground Nutmeg pinch (optional) - Store-bought refrigerated tortellini 1 package (9 oz/280 g) - Fresh or frozen peas 1 cup (5 oz/155 g) - Fresh flat-leaf parsley 1 teaspoon minced (optional) |
Steps
1. In a saucepan over medium heat, combine the cheese, cream, butter, a pinch each of salt and pepper, and the nutmeg (optional). Heat, using a wooden spoon to stir frequently until the cheese and butter are melted. Reduce the heat to heat to low, and simmer, stir occasionally until thickened. This will take about 15 minutes.
2. While the sauce simmers, bring a large pot of water to a boil over high heat. Add 1 teaspoon of salt, and the tortellini, and reduce the heat to medium-high, and boil the tortellini, until tender. This will take about 3-4 minutes, or according to the package directions. Add the peas during the last minute of cooking time.
3. Have a shallow serving bowl ready. Drain the tortellini and peas when they are done, and transfer to the serving bowl. Top it with the sauce, and stir. Sprinkle cheese and parsley (optional). Serve hot.
